Recipe: Nutty Squirrel Brew

Ingredients

  • 5 Gallons of Water
    0.75 lbs. Chocolate Malt (Organic) info
    0.31 lbs. American Caramel 40°L info
    2.18 lbs. Dry Amber Extract info
    3.86 lbs. Liquid Amber Extract info
    0.22 lbs. Malto Dextrin info
    0.22 lbs. Dark Brown Sugar info
    1.4 oz. Fuggle (Pellets, 4.75 %AA) boiled 60 min. info
    0.50 oz. Willamette (Pellets, 5 %AA) boiled 15 min. info
    0.50 oz. Willamette (Pellets, 5 %AA) boiled 1 min. info
    Yeast : White Labs WLP005 British Ale info

Instructions

  1. Please read instructions thoroughly before attempting to start this recipe.
    Put 2.5 gallons of water in a 20+ quart pot and get it 150-165 degrees (use a good sterilized thermometer).
    Put Chocolate Malt and American Caramel in a grain bag and steep for 20 minutes, making sure that the temperature stays between 150-165 degrees.
    Remove Chocolate Malt and American Caramel from the pot.
    The liquid is now called wort.
    Get the wort to a rolling boil.
    Add Liquid Amber Extract, Dry Amber Extract, and Maltodextrin to pot. Make sure to continuously stir these ingredients to get rid of any lumps.
    Add Fuggle hops and boil for 60 minutes.

    Prepare a sink with ice and water.

    Add one part of Williamette hops and boil for 15 minutes.
    Add the other part of Williamette hops and boil for 1 minute.
    Terminate boil

    Carefully place the pot in the sink, making sure that water does not get into the pot. At this point we want to get the wort down to 70 degrees as quickly as possible.

    Once the wort has reached 70 degrees, put it in either a plastic bucket or carboy. Make sure that you do not pour too much sediment into the bucket or carboy. Sprinkle the White Labs (yeast) and stir thoroughly. If using a bucket, seal the bucket and add the airlock which will be half full of water. If using the carboy, make sure to add the airlock half full of water.

    The airlock should show bubbles in about 24 hours.
